Okay! As you can see from the above photo of one of the beets I have begun the Battle of the Beets: that would be my struggle to overcome my complete revulsion of them and turn them into something edible at the request of my beloved husband. I have decided to try Devilcat's recipe, mostly because I have the things on hand to try to make it...and also it involves mixing the beets in with other things. As you can see, I have drawn first blood! I've managed to peel one and start slicing it. Eeeeew!!! But IT FOUGHT BACK!! I'm telling you this is a tough opponent! It spattered bright red beet juice all over my favorite pastel yellow jacket! Yuck!
